Cuvée des Ordinations

19,50 €

On 31 October 2026, at the Abbey of Triors, four new priests were ordained for the Society of the Missionaries of Divine Mercy. Among them is Father Clément, our son. To celebrate this event, we are offering a “Cuvée des Ordinations”.

Two grape varieties, two vintages. The gamay saint-romain from the cool 2024 vintage joins a sun-drenched 2025 syrah from the South, where the mistral blows. The back label bears the names of the four young priests. Deo gratias!

Limited edition of 500 numbered bottles.

Format
Grape varieties & terroir

Gamay Saint-Romain (2024 vintage) and Syrah (2025 vintage).

Gamay Saint-Romain: hillsides of the Monts de la Madeleine, at an altitude of 400 m, on granitic sands. 25-year-old vines, yield of 20 hl/ha.

Syrah: somewhere in the South, where the mistral blows, on a sandy-loam terroir. 20-year-old vines, yield controlled at 30 hl/ha.

Organic farming, hand-harvested in small 15 kg crates.

Winemaking & ageing

Spontaneous fermentation with indigenous yeasts, in stainless steel tanks for the Gamay Saint-Romain and in terracotta amphorae for the Syrah. Free-run and press wines are blended.

Aged for 18 months in used barrels for the Gamay, and 10 months for the Syrah.

Neither fined, nor filtered, nor sulfited: there is no "contains sulfites" mention on the label because the wine contains none. Bottled at the estate (75 cl and magnum), with a natural cork sealed with beeswax.

12% vol. · Vin de France · Certified organic by Ecocert · Vin Méthode Nature

Tasting notes

A silky and velvety mouthfeel, with beautiful suppleness.

The palate then opens up, indulgent, dense and fruity: the freshness of Gamay on granite, the depth of dark fruits and the spicy touch of Syrah.

Light, almost melted tannins, and real length.

Food pairing & serving

Grilled rib steak or duck breast, Morteau sausage, lentils with bacon, sautéed mushrooms, aged cheeses such as Saint-Nectaire.

Serve at around 15-16°C.
